Mushroom Quinoa

 

Prep time: 10 minutes 

Cooking time: 25 minutes

Yields: 4 servings

½ cup dry quinoa, tricolor

½ dried mushrooms reconstituted in 1 ½ cup warm water

1 med onion, diced

4 cloves garlic, sliced

2 cups diced kale

1 tsp red miso

½ cup veg broth

2 tsp nutritional yeast

1 tsp ground sage

2 T chopped parsley

1 scallion sliced

1/3 cup walnuts, chopped

Fresh ground black pepper to taste

 

In a wide and shallow bowl place dried mushrooms and warm water, set aside for 20 minutes while prepping your vegetables. Cook quinoa in 1 cup of the mushroom water for 15 min. Meanwhile saute the onion and kale stems in a large saute pan with vegetable broth as needed for 5 min. Then add kale leaves and garlic and cook for 5 more min. When the quinoa is done turn off heat, do not remove the lid, let it steam. Mix the red miso with the rest of the mushroom broth. Add the nutritional yeast, sage and black pepper,  mix together. Turn off heat and mix in the walnuts, scallions and parsley.
