
Mirin-Braised Bok Choy with Shiitakes
Prep time: 10 minutes
Cooking time: 15 minutes
Yields: 2-4 servings

1 cup shiitakes sliced thin or beech mushrooms broken into small clusters
½ cup shallots or 1 med inion (baseball)
6 baby Bok choy halved lengthwise
¾ cup vegetable stock
¼ cup mirin
1 ½ tsp low sodium soy sauce
½” piece ginger, grated
1 clove garlic, sliced
1 guajillo pepper crushed
Heat skillet over med heat. Cook Bok choy cut side down for 3 min. When the Bok choy is ¾ cooked add shiitake slices, shallots, garlic and guajillo; cook for 5 minutes. Add vegetable stock, mirin, soy and ginger bring to a boil and reduce over med low heat and cook for 5-7 min reducing liquid in half. Arrange vegetables on a platter and pour sauce over Bok choy and shiitakes.

Note- Guajillo peppers bring a earthy slightly sweet depth to a dish. If you don't have guajillo peppers then you can replace with an Ancho pepper or paprika.

Serving size is dependant on if you are consuming it as a main or side dish.
